PRODUCTION: To make our flagship Prosecco, the grapes are manually harvested in mid September and left to ferment in autoclave without crushing or adding yeast and sugar for 70-90 days in autoclave.

TASTING NOTES: This wine of a pale straw color is rich with the flavor of ripe apples, pears, and nectarines with a touch of honey and almonds. With fresh zesty acidity it has a long pleasant finish.

FOOD PAIRING: It is a great match with a charcuterie board including cured meats and savory cheeses. Try it with sweet and salty appetizers like Prosciutto-Wrapped Dates. It is also great with seafood, as well as with Asian dishes such as Thai noodles or sushi.

SERVING TEMPERATURE: Best served chilled between 42-46 degrees F.
