PRODUCTION: This wine is made from hand picked grapes that have been left to dry on the vine. A total of 7 pounds of grapes are needed for each bottle of this wine. A low intervention approach is used in the cellar. The wine is matured in 50hl oak casks for 11-13 months depending on the vintage.

TASTING NOTES: A complex aroma of ripe plums, black currants, and blackberries can de noted along with the rich flavor of dried fruit, especially prunes. Layers of licorice and black pepper can be noted throughout. A long finish with the freshness of eucalyptus.

FOOD PAIRING: Pair with red meat like a juicy burger, steak, a roast, or grilled lamb. Also delicious with mushrooms and cheesy dishes. Chocolate chip cookies, and this wine are a match made in heaven.

SERVING TEMPERATURE: Transfer Torcia to a decanter to let breath before serving at room temperature.
